    I am surprised that nobody has mentioned "bramborák" yet. Made from crude potatoes with garlic and marjoram ....
    Of course rather unhealthy as it is fried on oil (better is on lard) 8)

    i agree lard is better - but i have alctually started using olive oil :( not only is fresh lard becoming harder and harder to find - but the price is unbelievable...

    by the way, have you heard of the baked version?? - more or less same ingredients, with the addition of semolina and yeast... it is called bramborka down in my area - none of my family had ever heard of it, so i'm not sure if it is a south bohemian "specialty"?

    Pork with the best dumpling (Potatoes Dumpling), but also could vote for traditional knedlo vepro zelo 8)

    Hermelin : fried camamber with capusta ....

    Hermelin is fried camambert? The way I see it Hermelin is very close to camambert, it is some Czech version of it.
    But breaded and fries Hermelin with French fries and tartar sauce is delicious.

    how about hermelin in bramborak - tis a good combination as well


    i've started baking hermelin in puff pastry (listové těsto) - it's not as messy to make :)

    Yes, hermelin in bramborak (potato pancake) is good too, agreed. But I must try it in puff pastry, never did before.

    This past weekend I made veprova (with wonderful caraway seeds), knedliky (bramborovy) and zeli (white sweet and sour). We had it with applesauce and a BEER of course. It was so very good. My mouth is watering as I write this. There is enough left for another meal.

    In fact I made extra knedliky and I will cube them, fry them up in some butter and then add an egg to them and scramble them. Another winning dish.

    do you ever make the filled potato dumplings?? with smoked pork??

    Koleno?? - is that what I think it is?

    As a child, mother cooked pig's feet and knuckles and we had it with FRESH kren. However, dad use to take the fresh kren and grate it (with tears streaming down his face). Then mother would grate apples and mix with the kren. We'd have that with the boiled pig's feet/knuckles and great rye bread.

    I miss that food since my family is not into that.

    The best "koleno" in Prague you can get in the restaurant "U Čejpů" :)

    Ah - trout - I love trout - broiled with some butter and lemon - mmmmm good

    another option for trout (works with most fish fillets as well):

    mix plain flour with some salt, pepper, sweet paprika, (a bit of spicy paprika as well if you like), and ground caraway - mix the same spices with some butter as well - coat the outside of the trout in the spiced flour mixture - the butter goes inside - then pan fry in butter

    I think it's hard to beat beef goulash and dumplings, you can throw a little zeli in there too and it doesn't hurt. My wife makes a great little dessert plum dumpling with chocolate sauce and cocoa...YUMMY! At our wedding reception there was a thin piece of pork (or beef?) wrapped around asparagus with cream and cheese...I don't know what it's called but it's MOST EXCELLENT.

    can I ask u if u consider the goulash a czech meal?
    for what I know is an hungarian one.

    any way, as is not possible to choose only one, in my personal list:
    1-kachena "breast" with red zeli and brambora knedlik
    2-vepro/knedlo/zelo
    3-Svíčková
