Uzene koleno

    This is a joint I am particularly fond of, even back here in Ireland.I have never bought it in Prague;what should I look for when buying it ? Can I eat it as it is, smoked, or do I have to cook it? How much would I expect to pay for it in a deli or butchers?

    I like it too and you don't have to cook it - the smoking process has 'cooked' it. I buy it from Tesco but I can't remember how much it costs - not that much, otherwise I would do!

    Well, I always cook "uzené koleno" (till the meat falls off the bones) before serving it - with mashed potatoes, pease-pudding and gherkins, or (which is my favorite) with apple-horse radish mash and fresh rye bread - yummy! :D Usual price here in Olomouc is 65-80 Kc/kg.

    Thank you,Jana. Sounds absolutely delicious! I also hope it is as cheap in Prague.
