    I would like to try my hand at making pernik this holiday season.
    Does anyone have a recipe with US equivalents please?

    Why not just a Czech recipe in metric? So long as you use all metric and don't try to mix the two systems, you're fine. You do have metric/imperial kitchen scales over there, don't you?

    That's a logical conclusion, but my scale only measure is ozs. :(
    I didn't want to purchase another scale for only occassional use.

    Forgot to add; where can I find prášek do perníku or what is in it?

    the prasek do perniku is either baking soda or baking powder with the spices mixed in

    do you want to make pernik as in a cake or pernik as in the type you cut out shapes???

    here are some of the recipes i've used:


    sorry it is in grams, but that converter above should sort it out ???

    500 grams cake flour 150 g sugar 250 g honey 1 egg 500 ml water 1 tablespoon baking soda 1 teaspoon spices (ground anise, cloves, cinnamon, star anise)*

    heat the water honey and sugar and blend with the flour. Let slightly cook. Add egg, baking soda and spice. Knead into smooth dough. Set aside and let rest for half-a-day. Roll out about hickness of your finger. Cut out various shapes and bake in hot oven. Immediately after baking, coat with beaten egg. Decorate when cooled.

    OR

    0 grmas cake flour, 250 g powdered sugar, 100 g honey, 2 eggs, 1 teaspoon rum, 1 teaspoon baking soda, 2 teaspoons spices (cloves, fennel, anise*) Mix dry ingredients.Add honey and eggs and make smooth dough. then same process as above.


    * the combinations of spices vary - my mother never used any other than cloves, cinnamon and anise. From looking at the various pernik spice blends available thtough, they can contain allspice, star anise, anise, fennel, cinnamon, cloves (in various combinations)

    if you want a recipe for penik cake, i will try and dig one up...

    I wanted to make pernik as shapes.

    On the second recipe it says "0 grmas cake flour" ?
    Could you tell me how many grams that might be?

    Perník na figurky (Gingerbread cookies)

    2 1/3 cups flour
    1 1/4 cups sufgar
    8 teaspoons gingerbread spice *
    1/2 teaspoon baking soda
    2 tablespoons honey, heated to lukewarm
    2 eggs, lightly beaten
    1 tablespoon rum
    1 teaspoon grated lemon peel
    1 egg lightly beaten

    Sift all dry ingredients onto a pastry board. Add the remaining ingredients except single egg, and work into a firm dough. Let stand overnight in a cool place. Next day, roll our 1/4 inch thick. Cut out gingerbread men or any other shapes. Brush with remaining egg. Place on a baking sheet lined with waxed paper and bake in a preheated 325 degree oven for 20 to 30 minutes. Decorate with icing

    * Ginger bread spice
    2 teaspoons ground cinnamon
    2 teaspoons ground cloves
    2 teaspoons ground allspice
    4 teaspoons ground anise
    4 teaspoons ground star anise
    1 vanilla bean ground

    The mixture is enough for 9 cups of flour
