Veal Hearts and Sour Cream Dill Gravy

    This was a dish my grandmother prepared in my youth in the 1960's and 70's

    It seems she would soak the sliced calf hearts in a brine for one or a couple of days prior to making it

    The sour cream dill sause was the best

    Was this something she or her mother created or is this a specific Czech dish?

    I can't help with the hearts, I'm afraid, but here's a receipe for the dill sauce. My Czech father used to serve it with beef, I think.

    Fry a finely chopped small onion in 2tblsp of butter
    Sprinkle in 2tblsp of plain flour
    Slowly add 2 cups of chicken stock
    Stir in 1/2 cup fresh chopped dill and 2tblsp of vinegar or lemon juice
    and salt, pepper and sugar to taste
