Svickova in Edmonton???

    Hello Everyone! I've found your website while trying to find a restaurant in Edmonton where I can go out for svickova. I've been to Prague twice and Brno once since last July (I can't get enough of the place :) and am now addicted to svickova! Any help would be greatly appreciated.

    Why not trying to make your own. Here is my mother's recipe. It was once described by a gentleman who had eaten at some of the finest restaurants in the US and Europe as the best meal he had ever had:

    SVICKOVA

    INGREDIENTS
    3 lb Tenderloin of beef
    MARINADE
    4 cups Water Vegetables – diced
    ¾ cups Vinegar 2 each Carrots, parsnips
    6 whole Peppercorns 1 med Onion
    1 Bay leaf 2 sticks Celery
    8 Allspice

    OTHER INGREDIENTS
    1/4 lb Bacon, diced 1 cup Milk
    2 tbs butter 2 tbsp Flour


    In a pot, mix Water and Vinegar add spices and diced vegetables. Bring to boil and cook for 15 minutes. Let cool. NEVER PUT SALT.

    When marinade is comfortably cool, pour over the meat and cover. Keep in a cool place for 3-4 days, every day meat turn.

    After 4 days:
    Sauté bacon and add butter and the vegetables and spices from the marinade. Brown everything a little. Add Meat and brown on all sides. Cover meat with marinade/ vegetables and roast AT 325 degrees F until meat is tender (1-1 1/2 hours), basting frequently.

    Take out meat and make sauce by taking milk and flower and mixing together. Pour over marinade, mix and cook slowly. If there is not enough sauce, add some water. Now you can add some salt. Taste and if not sour enough, add some more vinegar – little at a time. Cook for another 10-15 minutes.

    Strain the sauce through a sieve, straining the vegetables through it. Discard the residue.

    Before serving, heat the sauce and add some sour cream.

    Slice meat and serve with Dumplings. Pour sauce over dumplings and meat. Also serve with cranberry sauce.

    Svickova is my favorite czech meal! I tell everyone about it when I can, haha... :mrgreen:

    Not sure who exactly serves it in the US, but I know that the Czech Embassy website has a list of czech restaurants in the US which serve czech food...they just might have svickova...
