Pork knee......

    Can someone please tell me the best way to cook pork knee.
    I have tried it in a few restuarants whlie I have been living here and would like to cook it myself now. I enjoy it served with bread, horseradish and mustard.

    The best way is to wash the knee, and burn any remaining hair over the flame (gas burner, candle or just a match). Put the knee into boiling water with salt, peeled whole onion and few peppercorns and cook till the meat is tender, i.e. it falls off the bones (the time depends on the size and kind of knee - front or hind - approx. 90-120 minutes). Pressure cooker is an advantage here, but cooking in a regular pot makes it easier to check on the tenderness and appropriate amount of water - the knee should be covered with water all the time.

    BAKED PORK KNEES OR PIG TAILS

    Wash & burn off any hair.

    Arrange in roast pan.
    Season with salt, pepper & caraway seed to taste.

    Bake uncovered in 400 deg. oven. Turn every 20 minutes to allow browning.

    Add:
    1 lg. onion [chop]
    1/2 cup water
    cover, reduce heat to 325 deg.

    Bake about 2 more hours or until well done.

    I use an old razor (with demountable blade) for removing hair.
