Is it different how you greet a family member or friend vs. a stranger? Do men greet men differently than a man and a woman? And the same with women and women. Does this question make any sense at all :p

Yes, the greetings differ, sometimes quite a lot. When greeting a friend or family member, you just use the casual "Ahoj", Čau", "Nazdar" etc.
When greeting a stranger, "Dobrý den" ("Good day" literally) is the best choice, with variants "Dobré ráno" - good morning, "Dobrý večer" - good evening/night.
